The people and food of 2023

During 2023, I ate virtually every type of cuisine imaginable.

Many dishes were delicious, and made even more memorable because I had the chance to talk to, and learn from, the people in the restaurants cooking them.

Here’s a short list of some of my favourite experiences of this past year.


Dosas, Vikram Subramanian

A couple of years ago there were only a few Indian restaurants serving dosas, the crispy crêpe-like dish that’s a staple in the southern Indian sub-continent. Today there are many restaurants preparing dosas, including Jayalakshmi in downtown Kitchener.

Owner Vikram Subramanian says the rice-and-lentil batter takes a couple of days to prepare, from grinding and blending the ingredients to seasoning.

“The dosa mixture marinates and ferments for at least one day,” Subramanian said. The result is a delicious crispy, chewy rolled and stuffed dosa that comes in nearly two dozen variations.
