Chillin’ with rancher’s eggs / huevos rancheros
The versatile egg plays an important role in an incredibly wide range of cuisines from around the world.
That includes their role in the delicious and filling huevos rancheros, the Spanish for, literally, “rancher’s eggs.” The more common and general translation is “country” or “country-style eggs.”
The basic dish is comprised of fried corn tortillas topped with fried eggs (runny, please) and a layer of salsa or pico de gallo.
Of course, as with all foods, variations abound and can include fried potatoes, sour cream, beans and avocado.
Among other local venues, you can find huevos rancheros at Manx Pub on Elgin. They describe their version as “a universe of texture:”
“Two free-range eggs fried over easy, chilling out on black bean puree, a smokey chipotle sauce, over-melted cheddar and house-made guacamole on a crispy corn tortilla. It doesn’t even make sense.”
